Heritage Recipe

Grandmother's Gingerbread

Ingredients:

1/2 cup sugar

1/2 cup shortening

1 egg

1 cup molasses

2-1/2 cups sifted flour

1-1/2 teaspoons soda

1-1/2 teaspoons cinnamon

1 teaspoon ginger

1/2 teaspoon cloves

1/2 teaspoon salt

1 cup hot water

1 teaspoon lemon extract

Cream shortening and sugar with beaten egg and molasses. Add dry ingredients which have been sifted together. Add hot water and lemon extract. Beat till smooth. Spread in greased 9 x 13 x 2-inch cake pan.

Add topping of 1/2 cup granulated sugar and 1 teaspoon cinnamon. Bake 40 to 45 minutes in 350-degree oven.

To serve: Warm sweetened applesauce. Put about two tablespoons on top of cake pieces and top with real whipped cream.

Grandmother Linger was born in 1880, grew up in Lewis County, WV, married and had three children. In 1914 she moved with her husband and children to Randolph County, where they purchased a farm. The farm house (now "Linger In") was about twelve years old.

She was a graduate of The Academy in Buckhannon, West Virginia and enjoyed her home and family as well as travelling. There was always a house full of people and she was a great cook. One of her recipes that was most enjoyed by her guests was the following. Enjoy! Betty Linger
