Gray Squirrel's Dream
Hickory Pie

Ingredients - Crust:

3 cups flour

1/4 cup sugar

1/4 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1 cup butter

1 egg

1 Tablespoon vinegar

3 teaspoons water

Ingredients - Filling:

1 cup light corn syrup

1/2 cup brown sugar

1/4 teaspoon salt

2 teaspoons vanilla

2 teaspoons lemon juice

3 eggs, lightly beaten

1-1/4 cups hickory nut meats (halves and big pieces)

Crust: Mix dry ingredients and cut in butter. Mix eggs and liquids; slowly cut into flour. Mix until well blended. Shape into four patties; chill. Warm slightly before rolling out. Trim edges to about 1/2 inch; crimp.

Filling: Combine first 6 ingredients; blend well. Add nuts. Pour into unbaked pie shell. Bake at 450 degrees for 15 minutes. Reduce heat to 325 degrees; bake another 30 to 40 minutes until it looks good. Cool and eat.

Makes: 4 pies
