Specialty Recipe

Curried Fruit and Chicken
Ingredients for Sauce:
1 cup orange juice (or 1/2 orange and 1/2 pineapple juice)
1/3 cup honey
2 Tablespoons lemon juice
2 Tablespoons curry powder
1 teaspoon salt
2 Tablespoons corn starch
Ingredients for Chicken:
1 package of chicken fryers
2 Tablespoons butter
mixed fruit (pear, apple, orange, pineapple, grapes)

Sauce: Mix all sauce ingredients in blender.

Cooking: Preheat oven to 350 degrees. Melt butter in large iron skillet. Saute' chicken until brown (with skin side down); add sauce. Bake twenty minutes and turn chicken over. Add sliced fruit (mixture to your liking) and baste. Bake for 30 minutes more (basting occasionally).

Serve over rice.
