Fresh Peach Pancakes
with Quick Strawberry-Peach Sauce
- Ingredients
- 1-1/2 cups all-purpose flour
- 1/3 cup (packed) light brown sugar
- 1-1/4 teaspoons baking powder
- 3/4 teaspoon ground ginger
- 3/4 teaspoon cinnamon
- 1-1/3 cups milk
- 2 large eggs
- 4 Tablespoons (1/2 stick) unsalted butter,
melted
- 1 Tablespoon Grand Marnier or other orange
liqueur
- 1/2 teaspoon pure vanilla extract
- 2 peaches, peeled, pitted, and cut into small
dice
- Quick Strawberry-Peach Sauce:
- 1 cup sliced strawberries
- 2 peaches, peeled, pitted, and coarsely cut
- 1 Tablespoon Grand Marnier
- 1/4 teaspoon vanilla
- Confectioners' sugar to taste
In a medium bowl, whisk together the flour, brown
sugar, baking powder,* ginger, and cinnamon. In another bowl, whisk
together the milk, eggs, melted butter, Grand Marnier, and vanilla to
blend thoroughly. Pour the liquid ingredients over the dry ingredients
and mix with the whisk, stopping when everything is just combined
(don't worry if the batter is bit lumpy). With a rubber spatula,
gently fold in the peaches.
If necessary, lightly butter, oil, or spray your
griddle or skillet. Preheat over medium heat or, if using an electric
griddle, set to 350 degrees. If you want to hold the pancakes until
serving time, preheat your oven to 200 degrees. Spoon 1/4 cup batter
onto griddle for each pancake, allowing space for spreading.
*Always mix in baking powder just before
cooking
Sauce: Place strawberries,
peaches, Grand Marnier, and vanilla in a blender or a food processor
fitted with the metal blade and whirl until smooth. Taste and add
confectioners' sugar as needed. Store covered in the refrigerator
until ready to serve; the sauce will keep for a day.
To serve: Squiggle some sauce on
each plate (use a plastic bottle with screw-on tip, like ketchup or
mustard dispensers). Overlap two or three pancakes on a plate, and top
with butter and sauce, fresh berries, or fruit salad mix.
