Ingredients:

1-1/4 cups brown sugar

1/2 cup shortening

2 eggs. beaten

1-1/2 cups pumpkin (use canned if you do not have cooked fresh)

1 teaspoon vanilla

1/2 teaspoon salt

1/2 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1 teaspoon lemon extract

2-1/2 cups flour

4 teaspoons baking powder

1 cup raisins

1 cup chopped nuts if you can afford them (comments from Grandma!)

Preheat oven to 340 degrees. Cream sugar and shortening. Add eggs, pumpkin, and seasonings. Sift flour and baking powder and combine with sugar mixture. Add fruits and nuts if desired. Blend thoroughly. Drop from teaspoons onto a well-oiled sheet. Bake 12 minutes.

Note: The new flours don't need to be sifted.
