(Hot & Sour Shrimp Soup)

Ingredients

1/2 pound shrimp

1/2 cup straw mushrooms

1 to 2 stalks lemon grass

2-1/2 to 3 Tablespoons lime juice

4 to 5 magrood leaves

Sprigs of coriander (Chinese parsley)

1 to 1-1/2 teaspoons roasted-chili paste (Nam Prik Pao)

2 to 3 Tablespoons fish sauce

3 to 4 chili peppers

3/4 to 1 teaspoon sugar

Peel the shrimp. Cut and remove the center back line, then clean. Cut lemon grass into 3 to 4 pieces and bruise with a flat side of a cleaver. Squeeze the lime into a container. Cut lengthwise or bruise the chili peppers.

Boil 2 cups of water. Add lemon grass and magrood leaves. Add shrimp and let it boil about 2 to 3 minutes. Add fish sauce, mushrooms, and sugar and bring to a boil. Add lime juice, chili peppers, and roasted chili paste and remove from heat. Taste/add fish sauce, lime juice, and sugar as needed. Garnish with sprigs of coriander.
