Spinach and Cheese

Ingredients:

2 packages frozen spinach

1/2 pound cheddar cheese, grated or chopped fine

4 pieces bacon, chopped fine

4 eggs, hard-boiled

1 cup milk

3 Tablespoons butter

2 Tablespoons flour

1/2 teaspoon mustard

Salt and pepper

Fry bacon crisp. Place slightly thawed spinach in lightly buttered casserole and arrange a layer of halves of hard-boiled eggs and salt and pepper on top of spinach. Make a sauce by melting butter, blending in the flour, and then adding the milk and seasonings. Stir in the cheese and cook slowly until the cheese is melted. Pour sauce over the eggs and spinach. Cover the top with crumbled bacon and bake for 25 minutes in a 350-degree oven.
