Twice Removed Supermoist Banana Bread

Ingredients:

1/2 cup unsalted butter at room temperature (plus additional for pan)

1 cup sugar

3 ripe bananas, mashed

2 eggs, separated

1 teaspoon vanilla

1 teaspoon lemon juice

1 teaspoon baking soda

1-1/2 cups all-purpose flour

1-1/2 Tablespoons hot water

Heat oven to 350 degrees. Butter 9 x 5-inch loaf pan. Cream butter and sugar in a large bowl. Add bananas, egg yolks, vanilla, lemon juice and baking soda; mix thoroughly. Stir in flour. Beat egg whites until stiff; gently fold into batter until well blended. Stir in hot water. Scrape batter into prepared pan. Bake until a wooden pick inserted in center comes out clean, about 45 minutes. Turn bread out of pan and cool completely.
