Lobster Casserole

Can be kept warm in a casserole and so particularly suits a dinner without service.

Ingredients

6 Tablespoons butter

2 cups sliced mushrooms

2 teaspoons grated onion

6 Tablespoons flour

3 cups rich milk

4 beaten egg yolks

2 teaspoons salt

1-1/2 teaspoons mustard

few grains cayenne

2 cups grated cheddar cheese

2 teaspoons lemon juice

One 16-ounce tin fresh frozen lobster

Melt butter. Toss in onions and mushrooms until lightly cooked. Add a little salt and leave to one side. Blend flour into butter; stir in milk except 2 tablespoons. Cook and stir until mixture thickens. Stir a couple of spoons of hot sauce into yolks, then put yolks into sauce, stirring briskly. Add salt, mustard, cayenne, and about 3/4 of cheese. When lobster has thawed, add sherry, lemon juice, and most of lobster; reserve some lobster for top.
