Lentil Soup Napoli

Ingredients:

1 pound lentils, rinsed and picked through

10 cups water (or 5 cups water and 5 cups chicken stock)

3 teaspoons salt (optional)

1 pound sweet Italian sausage

1 very large onion, chopped

2 to 3 very large carrots, diced

2 cups celery, chopped (tops and all)

1 slightly heaping teaspoon oregano

1/2 teaspoon pepper

1 cup tomato sauce

Combine the lentils and water (and chicken stock, if using). Bring to a boil. Boil for 2 minutes. Remove from heat and let stand for 1 hour to soften. Return lentils and water to heat. Bring to a boil once again. Add 2 teaspoons salt and simmer for 1 hour.

Brown sausage. Add to lentils. Saute chopped onion in the sausage drippings, being sure to first pour off most of the fat. Add carrots and celery to the onions. Cook for 2 minutes. Stir in the remaining salt along with the oregano and pepper into the vegetables. Add this mixture to the kettle containing the lentils. Stir in the tomato sauce. Simmer 30 minutes longer.

Note: When making this, I sometimes add more celery, carrots, and onions, only because I like vegetables. I usually do not add salt when making this, because I cook salt free.
