Specialty Recipe

Mrs. B's Spinach Salad

Ingredients For the Dressing:

4 teaspoons sugar

1 teaspoon dry mustard

1/3 cup cider vinegar

1 cup mild olive oil

Salad Ingredients:

1 pound bag fresh baby spinach

1 head red leaf lettuce, torn into bite-size pieces

1/2 pound bacon, cooked and drained

3 hard cooked eggs

1 small red onion

4 ounces feta cheese

Combine all ingredients and mix well. Crumble bacon into small bits. Slice onion and chop eggs. Mix bacon, onion, eggs and cheese with greens, add dressing and toss salad. Season to taste with salt and pepper.

Serves: 6 to 8
