Harvest Moon Cookies

A Morningstar original. A hearty and satisfying cookie, combining the exotic flavors of local black walnuts with the tangy twist of autumn cranberries. We often get our walnuts from "Uncle Morris," a local 92-year-old man who collects and shells them himself. "Uncle Morris" also loves to crochet and has taught many of his grandchildren and great-grandchildren the intricate craft.

Ingredients:

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 cup butter

3/4 cup sugar

3/4 cup packed brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups uncooked oat flakes

1/2 cup chopped black walnuts

1 cup dried sweet cranberries

Preheat oven to 375 degrees. Sift flour, salt, and baking soda. Set aside. Beat together butter, sugars, eggs, and vanilla until light and fluffy. Stir in flour mixture and oats until well combined. Add walnuts and cranberries. Drop by rounded teaspoonfuls, 2 inches apart, onto cookie sheet. Bake 10 to 12 minutes until golden brown. Let stand 1 minute before removing and cooling on a wire rack.

Makes: about 6 dozen.
