Butterscotch Bars

Janet has been baking these delicious, moist, and chewy bars for guests at Morningstar Retreat since we opened in 1994. They still get rave reviews. One return guest was willing to change his reservation date to coincide with Janet's baking schedule just to enjoy them again. Of course, we made sure that they were available to him at his preferred time of visit.

Ingredients:

1-1/4 cups flour

3/4 teaspoon baking powder

3/4 teaspoon salt

3/4 cup butter

1 cup chopped pecans

1-1/2 cups packed brown sugar

3 eggs

1-1/2 teaspoons vanilla extract

1 cup chocolate chips

Preheat oven to 350 degrees. and spray a 9 x 13 x 2-inch pan with no-stick cooking spray. Sift flour, baking powder, and salt together; set aside. Melt butter in a small saucepan, add sugar, and stir over low heat until sugar is melted. Turn into medium bowl and add eggs, one at a time, beating well. Add vanilla. Stir in the flour mixture, chocolate chips, and pecan pieces, mixing well. Bake 30 minutes. Let cool completely in pan on a wire rack before cutting.
