Ingredient: Amount: Method:
Vidalia onions, minced 1 pound Combine in a heavy saucepan and simmer over medium heat for 5 minutes. Remove from heat and puree in food processor. Cool.
Rosemary, minced 1 sprig
Sugar 1 cup
Water 1/2 cup
Champagne 1/2 cup
Apple juice 1 cup
Lemon juice 2 Tablespoons Add lemon juice.
Egg whites 2 In a separate bowl, whisk whites until foamy. Fold into above mixture and place in ice cream machine according to manufacturer's directions.
