Chocolate Mousse
Ingredient: Amount: Method:
Sugar 1/2 cup Combine in a heavy saucepan and reduce over medium heat to syrup consistency. Allow to cool.
Meyer's Rum 1/2 cup
Semi-sweet chocolate 1/2 pound Melt over a double boiler. Stir in cream and sugar syrup until smooth.
Heavy cream 1/2 cup
Egg whites 1 cup Whip to stiff peaks and fold into chocolate.
Heavy cream 4 cups Whip to stiff peaks and fold into chocolate and chill. Serve in chilled glasses with a fresh mint sprig.

Yield: 10 to 12 servings.
