Beef Fondue Chinois

Ingredient:	Amount:	Method:
Rich beef stock	1 quart	Heat to a simmer in a fondue pot. Season with tomato paste and salt and pepper.
Tomato paste	1 Tablespoon
Salt and pepper	To taste
Beef sirloin	1 pound	Trim beef and slice thinly across the grain into 2-inch pieces.
Serve with	Caper-Pesto Aioli or Wasabi and Mango Dressing

Yield: One fondue for 2 people
