Szechwan Cabbage

Ingredient:	Amount:	Method:
Bacon, 1/4-inch dice	3/4 pound	Brown bacon lightly in oil in a heavy pot over medium heat.
Peanut oil	1/2 cup	Brown bacon lightly in oil in a heavy pot over medium heat.
Onion	2 pounds	Slice thinly and add to pot. Stir until cabbage is coated with oil and begins to cook down.
Green cabbage	6 pounds
Rice vinegar	1 cup	Add all other ingredients and cook, stirring occasionally, until the cabbage is soft and the flavors have blended. Adjust seasonings to taste.
Sugar	1/4 cup
Caraway seeds	3 Tablespoons
Garlic, chopped	3 Tablespoons
Ground ginger	1 Tablespoon
Szechwan peppercorns	3 Tablespoons
Salt	1 Tablespoon
