Spaetzle

Ingredient:	Amount:	Method:
Flour	4 cups	Mix all ingredients well.
Milk	1-1/2 cups
Eggs	5 each
Salt and pepper	2 teaspoons
Nutmeg	1 pinch
Water	2 gallons	Bring to a boil in a large pot. Punch dough through a spaetzle maker in batches. Let dumplings rise to the surface, stir, and cook for 30 seconds. Remove with a slotted skimmer. Place in ice water until well chilled. Drain well and toss with enough oil to coat lightly. Store in an airtight container.
Salt	1 Tablespoon
Oil	1/2 cup
Butter	To taste	Preheat a non-stick saute pan over medium heat. Add spaetzle and cook, stirring, until dumplings are heated. Season with salt and pepper and garnish with parsley.

Parsley, minced	To taste
