Cauliflower Veloute

Ingredient:	Amount:	Method:
Butter	1 pound	Preheat a heavy soup pot over medium heat. Add butter and then other ingredients. Cook, stirring, until slightly softened.
Cauliflower	5 pounds
Onions, sliced	2-1/2 pounds
Salt and pepper mix	1 Tablespoon	Add these and cook until cauliflower is very soft. Process in a blender until smooth. You may reprocess portions of this mixture with raw spinach or tomato paste to color it, then add it as a garnish using a squeeze bottle.
Garlic	15 cloves
Heavy cream	1/2 gallon
Half & half	1/2 gallon
