Delta Bisque

This lovely thick bisque is excellent served with pasta. A bowl of your favorite pasta, covered with "leftover" soup makes a meal that is easy and delicious!

Ingredients

2 large catfish fillets

1 Tablespoon butter

3 green onions, chopped

2 stalks celery, finely chopped

1/3 cup butter

1/3 cup flour

4 cups milk

1 cup cream

1 teaspoon Tabasco

1 Tablespoon chopped parsley

1 bay leaf

1 Tablespoon chopped chives

1 teaspoon salt, or to taste

Wash the catfish fillets and cut into 1/2-inch pieces. Place in a large heavy boiler with 1 tablespoon butter, onions, and celery. Simmer slowly for 3 to 4 minutes, but do not brown. Remove fish and vegetables. In the same pan, melt 1/3 cup butter. Add the flour and stir 2 to 3 minutes to cook the flour. Slowly add the milk and cream, continuing to stir while the bisque thickens. Add the catfish mixture and the remaining ingredients. Simmer very slowly for 15 minutes. Serve immediately, or the bisque may be refrigerated for up to 3 days.
