Top-of-the-Stove 15 Cheeseburger Meatloaf

Ingredients

2 pounds ground Beefalo

2 eggs

1/2 cup catsup

1/2 cup chopped onion

2 teaspoon Worcestershire sauce

1 teaspoon mustard

1 cup crushed crackers

Mix together and place in cold 10-inch heavy skillet. (Pat out all the way to edges of skillet to make a circle). Cover. Start on medium-high heat. After the lid is hot to touch, turn heat to lowest setting for 15 or 20 minutes. Before removing from skillet, cover top with slices of Velveeta processed cheese and replace lid on skillet just long enough for the cheese to melt.
