Ingredients

4 genuine U.S. farm-raised catfish fillets

1/2 teaspoon garlic salt

1/2 teaspoon pepper

3 medium tomatoes, chopped

1/4 cup chopped onion

2 medium jalapeno peppers, chopped

2 Tablespoons white wine vinegar

1 teaspoon salt

To prepare the Catfish: Sprinkle farm-raised catfish fillets with garlic salt and pepper. Place in well-oiled grill basket or on well-oiled grill rack. Grill uncovered directly over medium-hot coals about 5 minutes per side or until fish flakes easily.

To Prepare the Salsa: In a bowl, combine tomatoes, onion, jalapeno peppers, vinegar and salt. Stir well. Let stand at room temperature for about 30 minutes before serving. Makes three cups.
