Hushwee Mediterranean Rice-Meat Dish

Ingredients

1/2 pound coarsely ground lamb

1-1/2 cups long grain rice

4 Tablespoons butter

1/4 cup pine nuts

3 cups chicken broth

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon cinnamon

1/4 teaspoon allspice

Wash rice and soak in warm water for 15 minutes, then drain. Brown lamb and pine nuts in butter. Stir in spices with the meat and nuts mixture. Add drained rice and stir until the nuts, meat, and spices are thoroughly mixed. Stir in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Serve with a side dish.
