Mom's Orange Delight Cookies
Mom was a farmer's wife, tended a huge vegetable garden, worked
full-time as a secretary, raised three kids, and always found time to
bake cookies. She usually made Orange Delight Cookies in January,
after we had finished all of the different kinds of Christmas cookies
she had baked.
These cookies have a "cake-like" texture with an
orange juice and sugar glaze on top. The cookies should be baked at
least one day in advance to bring out the flavors. The cookies
actually get better with age up to two weeks.
Fresh homemade cookies were the standard snack we grew up with.
We continue this tradition at Country Comforts and always have
fresh-baked cookies ready for our guests, mostly using Mom's recipes.

- Ingredients
- 3/4 cup butter or margarine
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1-1/2 teaspoons grated orange rind
- 1/2 cup sour milk
- 3 cups flour
- 1/2 teaspoon baking soda
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup nuts (hickory or pecan)
- Glaze:
- 1-1/2 teaspoons grated orange rind
- 1/3 cup orange juice
- 1 cup sugar
Cream butter and sugars. Stir in eggs, vanilla, orange rind, and
sour milk. Mix in flour, baking soda, baking powder, and salt. Stir in
nuts. Drop by teaspoonfuls onto cookie sheet. Bake at 350 degrees
about 10 minutes. Make glaze by combining orange rind, orange juice,
and sugar. Using a teaspoon, drizzle on cookies while they are still
hot.
Makes: about 3 dozen cookies
