We think that when guests visit southwest Wisconsin, they want to taste southwestern food.

Ingredients

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

1/2 cup diced yellow bell pepper

1/2 cup diced onions

6 eggs

1 cup corn chips

Salt and pepper

Parsley

Saute peppers and onion until they are crisp and crunchy. Add eggs and corn chips. Stir together and add salt and pepper to taste. Cook until eggs lose shine. Garnish with parsley.

Serves: 4
