Judith's Granola
- Ingredients:
- 1 cup apple juice or apple cider
- 1 cup honey
- 10 cups rolled oats
- 1-1/2 to 2 cups walnuts, rough-cut
- 1/2 cup sesame seeds
- 1/2 cup sunflower seeds
- 1-1/2 Tablespoons ground cinnamon
- 1 cup raisins
- 1 cup other dried fruit (such as cranberries, cherries, and/or
chopped dried apricots)
Use a 4-cup glass measuring jug to both measure and heat the liquid
ingredients (4 minutes in the microwave). While they are heating, mix
together the oats, cinnamon, sesame, and walnuts. A bread bowl works
well for this. Mix the heated liquids together and then add to the dry
ingredients. Mix thoroughly and let the mixture sit for a few minutes
to absorb the liquid. Spread the mixture out on a baking sheet with
sides.
Bake at 300 degrees for 20 minutes or until it starts to brown. Take
care not to let it burn, however. While the granola is still warm from
the oven, mix in the dried fruit. When it is cool, store in a glass
jar in the refrigerator.
Note: Store-bought granola, and even homemade granola,
is usually heavy in both oil and sugar. In this recipe, the oil is
eliminated without sacrificing taste or texture. Judith uses honey as
the sweetener, and the secret liquid ingredient is apple juice!
Judith usually makes granola at the same time as she bakes her
bread. This allows her to reuse her oiled bread bowl and baking sheet
for the granola. She also takes advantage of the warm oven after the
bread has finished baking!
