Ingredients

3 cups zucchini, sliced then finely shredded

1-2/3 cups sugar

2/3 cup vegetable oil

2 teaspoons vanilla

4 eggs

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon baking powder

2 teaspoons baking soda

3 cups flour

1/2 cup walnuts

1/2 cup raisins

Beat eggs, sugar, oil, and vanilla to a creamy consistency. Sift the flour, baking powder, baking soda, salt, and cinnamon into a bowl together, add walnuts and raisins, then add to the creamed mixture alternately with the shredded zucchini. Mix thoroughly.

Preheat oven to 350 degrees and pour the batter into loaf pans. Bake at 350 degrees for 30 to 40 minutes. When done, the batter should be fully risen and the top should be evenly browned over the whole surface. (A toothpick inserted in the center will come out clean.)
