Fruit Salsa

Ingredients

1 medium red onion

Water as needed

1/2 cup raisins

1/2 cup prunes

1/2 cup apricots

1/2 cup dates or figs

1-1/2 to 2 cups water

1/4 cup vinegar

1/4 cup sugar

2 Tablespoons chopped green chilies

1/2 teaspoon salt

1/2 teaspoon ginger

Combine onion and water in saucepan. Boil; simmer for 5 minutes. Drain and reserve. All fruits need to be diced. Place raisins, prunes, apricots, figs, and additional 1-1/2 cups water (enough to cover fruits) in saucepan. Boil, reduce heat to low, and simmer for 15 minutes. Add onion, vinegar, chilies, salt, and ginger. Boil, then simmer for 5 minutes. Salsa will thicken as it cools. Serve over a block of cream cheese with crackers.

Note: You can use almost any dried fruit combo.
