Specialty Recipe

Pumpkin Cookies

Ingredients:

4 cups unsifted flour

2 cups oatmeal

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1-1/2 cups butter or margarine, softened

2 cups brown sugar

1 cup granulated sugar

1 egg

1 teaspoon vanilla

One 16-ounce can solid pack pumpkin

Mix flour, oatmeal, baking soda, cinnamon, and salt in bowl and set aside. Mix butter and sugars until smooth. Add remaining ingredients (except pumpkin) to butter-sugar mixture. Alternately mix pumpkin and flour with mixture. Drop by spoonfuls on lightly greased cookie sheet. Bake at 350 for 15 to 20 minutes.

Optional: Add 1 cup chopped pecans or walnuts
