Specialty Recipe

Banana Bread

Ingredients:

1 stick butter, softened

1-1/4 cups sugar

2 eggs

1-1/2 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 very ripe bananas, mashed

3 Tablespoons sour cream

Mix butter and sugar with electric beaters until blended. Add eggs and beat until fluffy. In separate bowl, combine flour, baking powder, baking soda and salt. Add to creamed mixture along with mashed bananas and sour cream. Mix just until blended. Pour into greased 8 x 8-inch square baking pan. Bake at 350 degrees 30 to 35 minutes or until golden brown. Additional baking time (approximately 10 minutes) is needed if pan is glass. Cool completely in pan on rack before cutting.

Freezes well. Slice when frozen for next day serving.
