Strawberry Bread

Ingredients

3 cups all-purpose flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

4 eggs, beaten

1-1/2 cups vegetable oil

Two 10-ounce packages frozen strawberries, thawed and chopped or 2 cups fresh or frozen strawberries

1 cup chopped pecans (optional)

Frosting:

1/2 box confectioners' sugar

4 ounces cream cheese

1 teaspoon vanilla

1/2 stick (1/4 cup) soft margarine

Chopped nuts (if desired)

Combine flour, sugar, baking soda, salt, and cinnamon in a large mixing bowl. Make a well in the center. Combine remaining bread ingredients in a separate bowl, then add to dry ingredients, stirring until well combined. Spoon mixture into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake at 350 degrees for 1 hour. Cool loaves in pans about 10 minutes. Remove to wire racks and cool completely.

Frosting: Mix together frosting ingredients and frost cooled bread.

Makes: 2 loaves
