Specialty Recipe

Applesauce Cake

Ingredients

2-1/2 cups flour

1-1/2 cups sugar

1/4 teaspoon baking powder

1/2 teaspoon baking soda

1-1/2 teaspoons salt

3/4 teaspoon cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon allspice

1/2 cup butter or margarine

1/2 cup water

2 cups sweetened applesauce

2 eggs

1 cup chopped raisins

3/4 cup chopped nuts

Ingredients for Icing

1/3 cup butter

1 cup brown sugar

1/2 cup cream or whole milk

Confectioner's sugar

Mix dry ingredients together; add butter, water, and applesauce. Beat 2 minutes at medium speed with mixer. Add eggs; beat 2 more minutes. Fold in raisins and nuts. Bake in greased 9 x 13-inch pan for 45 to 50 minutes at 350 degrees. Frost when cool.

Icing: Melt butter in saucepan; add sugar and bring to boil. Add cream. Remove from heat and cool to lukewarm. Add enough confectioner's sugar for good spreading consistency.
