Blintz Souffle

Ingredients for Filling:

16 ounces small-curd cottage cheese

2 egg yolks

1 Tablespoon sugar

1 teaspoon vanilla

8 ounces cream cheese, softened

Ingredients for Batter:

1-1/2 cups sour cream

1/2 cup orange juice

6 eggs

1/4 cup butter (1/2 stick)

1 cup flour

1/3 cup sugar

2 teaspoons baking powder

1/2 teaspoon cinnamon

Ingredients for Topping:

1/2 cup sour cream

1/4 cup fresh fruit, or use and fruit jam

Mix all filling ingredients with a mixer and set aside. Put all batter ingredients into a blender and blend thoroughly. Pour 1/2 of batter into a 9-1/2 x 13-inch casserole dish. Add 1/2 of the filling by placing it by Tablespoonfuls on top of the batter. Gently spread the filling over the top of the batter. Place the remaining 1/2 of the batter over the filling. (This will look silly initially but it will work.) Spread the remaining filling over the second layer of batter. The layered mixture may be left in the refrigerator overnight.

Bake uncovered for 50 to 60 minutes at 350 degrees. Top with fresh fruit and sour cream.

Serves: 8 to 10 (good-sized portions). Preparation Time: 20 minutes. Cooking Time: 1 hour.
