Texas Ranger Baked Eggs

Ingredients

7 eggs

1 cup milk

2 teaspoons sugar

4 ounces cream cheese

1 pound small curd cottage cheese

1 pound Monterey Jack cheese

1/4 cup chopped green bell pepper

2/3 cup margarine, melted

1/2 cup flour

1 teaspoon baking powder

Dash paprika

Dash ground mustard

The night before: Beat eggs, milk and sugar together. Add cream cheese, cottage cheese, Jack cheese, bell pepper, and margarine and mix well. Mix in flour, baking powder, paprika, and mustard. Spray 3-quart baking dish with Pam non-stick cooking spray and pour batter in and refrigerate until morning.

Serves: 10 to 12
