Cheddar Cheese Soup

Ingredients

1 cup finely chopped onion

1 cup grated carrots

1 cup finely chopped celery

2 quarts water

2 ounces chicken base

One 12.5-ounce can chicken stock

1 cup flour

1 cup butter, melted

One 12-ounce can evaporated milk

2 cups (8 ounces) shredded cheddar cheese

White pepper to taste

Add water and vegetables in pot; cook until tender. Add chicken stock and base; cook for 30 minutes. Mix flour and melted butter; add to vegetables. Add milk, cheese, and pepper; cook until cheese is melted.
