Lemon Bars

Ingredients Crust:

2 cups flour

1/2 cup powdered sugar

1 cup margarine, melted

Filling:

4 eggs, beaten

2 cups sugar

1/2 cup lemon juice

1/4 cup flour

1/2 teaspoon baking powder

Combine flour and powdered sugar. Add melted margarine and mix well. Press evenly into a 9 x 13-inch ovenproof pan. Bake at 350 degrees for 20 to 25 minutes. Beat eggs, sugar, and lemon juice together. Combine flour and baking powder and stir into egg mixture. Pour over crust and bake at 350 degrees for 25 minutes. Sprinkle with powdered sugar and cut into bars.

Yield: 35 bars
