This is is great as a brunch main dish. Add cooked broccoli, asparagus, mushrooms, green onions, bell peppers or similar vegetables before adding the sauce.

Ingredients:

3 cups cooked wild rice

2 cups cubed cooked ham

2 Tablespoons butter

1 dozen eggs, slightly beaten

1/3 cup cold milk

3 Tablespoons butter

Cheese Sauce:

2 Tablespoons oil

3 Tablespoons flour

1 cup milk

2 cups grated Gouda cheese

1/4 teaspoon powdered ginger

1/8 teaspoon white pepper

1/4 teaspoon salt

Place cooked rice in bottom of 9 x 11-inch greased casserole. Saute ham in 1 Tablespoon butter until ham begins to brown. Place ham and juice on top of rice. Combine eggs and milk. Soft scramble eggs in 3 Tablespoons butter; spoon on top of ham.

Make sauce in skillet or in microwave. Stir flour in heated oil. Stir in milk and cook until sauce thickens. Stir in cheese and seasonings. Spoon over casserole.

Bake at 325 degrees for 25 minutes covered, then an additional 10 to 15 minutes uncovered. Or, refrigerate overnight and bake the next morning, adding about 10 minutes to the covered baking time.
