Oatmeal Muffins

These are not rich muffins, but are somewhat similar to a biscuit. I sometimes serve them instead of hot biscuits. ...Margaret Delashmit

Ingredients
1 cup uncooked quick-cooking oats
1 cup buttermilk
1 regular package (makes 12 muffins) pre-mixed plain muffin mix (You can use a blueberry muffin mix and save the blueberries for coffee cake or pancakes.)
1/2 teaspoon baking soda
1/4 cup brown sugar, packed well
1 egg, beaten well with a slotted spoon or whisk.
1/3 cup oil

Combine oats and buttermilk. Let soak while you do the rest. Spray a muffin pan (for 12 muffins) with vegetable oil . Set oven for 400 degrees. In a large mixing bowl, pour muffin mix. Add baking soda and brown sugar; stir well . Add oats and milk mixture, egg, and oil. Mix well. Spoon into muffin pans. Bake 20 to 25 minutes until brown.
