Ingredients

2 cups flour

1/2 cup sugar

1 stick butter

1 cup milk

3-1/2 teaspoons baking powder

1 teaspoon vanilla

1/8 teaspoon salt

1 egg

1/2 cup chocolate chips

1/2 cup shredded coconut

Cream together sugar and butter until light and fluffy. Add egg and blend. Add baking powder, vanilla, and salt. Add flour and milk

Stir in chocolate chips and coconut. Pour into prepared muffin cups. Sprinkle additional coconut on top of muffins. Bake at 400 degrees until coconut is browned or knife comes out clean.

Makes: 12 muffins
