Zucchini Bread

Ingredients

2/3 cup shortening

2-2/3 cups sugar

4 eggs

3 cups shredded zucchini

2/3 cup water

3-1/3 cups all purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

2 teaspoons vanilla

1 teaspoon ground cloves

2/3 cup chopped nuts

2/3 cup raisins

Heat oven 350 degrees. Grease bottoms only of 3 loaf pan (8-1/2 x 4-1/2 x 2-1/2 inches). Mix shortening and sugar in large bowl. Add eggs, zucchini, and water. Blend in flour, baking soda, salt, baking powder, cinnamon, cloves, and vanilla. Sir in nuts and raisins. Bake 1 hour and 10 minutes. Cool completely before slicing.

This is a big hit for breakfast. We have a large garden in summer and we grow our own vegetables. I always plant a lot of zucchini and pumpkins for my bread. You can use pumpkin instead of zucchini in this recipe.
