Blueberry Streusel Coffee Cake

Ingredients for Coffee Cake

2 cups all-purpose flour

3/4 cup sugar

2 teaspoons baking powder

1/4 teaspoons salt

1 egg

1/2 cup milk

1/2 cup butter, softened

1 cup fresh or frozen blueberries

1 cup chopped pecans

Ingredients for Streusel Topping

1/2 cup sugar

1/3 cup all-purpose flour

1/4 cup cold butter

Coffee Cake: In a large mixing bowl, combine the flour, sugar, baking powder and salt. Add egg, milk and butter; beat well. Fold in blueberries and pecans. Spread into a greased 9 inch square baking pan.

Streusel topping: Combine sugar and flour in a bowl; cut in butter until crumbly. Sprinkle over batter.

Bake in oven at 375 degrees for 35 - 40 minutes

Makes: 9 servings
