Mix together poultry seasoning, white pepper, salt, and cider vinegar. Marinate chicken in mixture while making egg/oil mixture. Crush the garlic through a garlic press. Mix garlic into the eggs, then place in a food processor. Process on high speed and slowly add the oil in a thin stream. When the oil has been completely absorbed into the eggs, add the cider mixture with the processor still on. Cook the chicken and serve with the vinaigrette mixture.
