Equipment Needed: Large cooking pot, food processor, plastic or enamel storage container. Combine lemon juice, apple juice, sugar, and cinnamon sticks in a large cooking pot. Pare apples, then slice into the apple juice. Cook, covered, over medium heat until apples are tender. Remove from heat. Remove cinnamon sticks, then add vanilla extract. Place in food processor and process into a puree. Add orange juice and half & half. Chill immediately. Garnish with a tiny parsley leaf and a thin unpeeled apple slice which has been dipped in lemon juice.
