Cinnamon Rolls
- Ingredients Rolls:
- 1 cup milk
- 1 cup water
- 1/2 cup butter (unsalted)
- 1 egg, beaten
- 6 cups all-purpose flour
- 1/2 cup sugar
- 7 teaspoons yeast
- 2 teaspoons salt
- Filling:
- 2/3 cup brown sugar
- 1/3 cup butter, melted
- 2 Tablespoons cinnamon
- Glaze:
- 3 Tablespoons butter
- 1 Tablespoon milk
- 1-1/2 teaspoons vanilla
- 3 cups sifted powdered sugar
Rolls: In a small saucepan, mix milk, water, and butter.
Heat until very warm and butter melts. Add the egg. Set aside. In a
large bowl, mix 2 cups of the flour with the sugar, yeast, and salt.
Add the milk/egg mixture. Beat at medium speed until well blended. Add
remaining flour and beat until batter is smooth and elastic,
approximately 5 to 7 minutes. Place in a greased bowl, turning once to
grease the top of the dough. Cover with a damp tea towel and let rise
in a warm place until doubled in size, approximately 1 hour.
Filling: Combine brown sugar and cinnamon and set aside.
Melt filling butter.
After dough has risen, punch down and let rise for 10 minutes.
Divide dough in half. Roll half out on a floured surface to form an 18
x 22-inch rectangle. Brush with half the filling butter. Sprinkle with
half the sugar/cinnamon mixture. Beginning at the long side, roll up
jellyroll fashion. Dampen edge with water and press together to seal.
Cut into 1-1/2 inch slices, forming rolls, and place cut side down in
a greased 13 x 9-inch buttered pan. Cover with a damp tea towel and
let rise in a warm place until doubled in size, approximately 45
minutes. Repeat with remaining dough. When dough has risen, bake in a
preheated 375 degree oven for 20 minutes or until golden.
Glaze: While rolls are baking, prepare the glaze. In a small
saucepan, heat together butter and milk until the butter is melted.
Add vanilla and sugar, adding the sugar gradually until glaze is
desired consistency for spreading. Add milk if necessary. Apply glaze
after rolls have cooled for 5 to 10 minutes.
Makes: 24 rolls
