German Pancake

Ingredients

3 large farm fresh eggs

1/3 cup unsifted flour

1/3 cup milk

1/4 teaspoon salt

3/4 Tablespoon shortening

1/2 cup cream (M.M.F. special cream)

2-1/2 cups fresh fruit

Confectionery sugar

Heat oven to 450 degrees. In a food blender, process eggs until frothy. Add the flour, milk, and salt. Process 5 seconds.

Place a 6- to 8-inch black iron skillet in oven to heat. Remove and add the shortening, covering the entire surface with a pastry brush. Pour batter into the hot skillet, return to oven, and bake 12 to 15 minutes until puffy and lightly browned. Remove from skillet. Sprinkle with confectionery sugar. Spread with cream. Fill with fresh fruit.
