Citrus Pancakes with Oranges

Ingredients

Low-fat buttermilk baking mix

Skim milk

Orange juice

2 eggs (or 3 egg whites or Egg Beaters egg substitute)

Mandarin orange slices

Orange wedge/slice

Mix 2 cups low-fat buttermilk baking mix with 1/2 cup skim milk and 1/2 cup orange juice and eggs. Cook on electric griddle at 400 degrees and you don't need any butter, non-stick spray or anything. Top with Mandarin orange slices. Use orange slice/wedge for garnish.
