Baked Apple

Ingredients:

1 large apple - Golden Delicious, Cortland, or Jonathan

2 Tablespoons raisins

2 Tablespoons sugar

2 Tablespoons butter

1/2 cup apple juice

Wash and core apple. Slice off bottom so it will sit up straight. Place in a shallow baking dish. Fill center alternating sugar, raisins and butter until filled to the top. Fill dish with apple juice. Cover dish with heavy aluminum foil and bake for 30 to 40 minutes. Place in a bowl and top with some liquid from baking dish, a sprinkle of granola, whipped cream, dash of cinnamon sugar, a cinnamon stick, and a sprig of mint. Serve warm.
