Shirred Eggs

Ingredients:

1 slice wheat bread, toasted

2 Tablespoons cream cheese

1 teaspoon chopped chives

1 medium mushroom sliced

3 cherry tomatoes, quartered

3 Tablespoons shredded Swiss, Cheddar, or jack cheese

2 eggs

Spread toast with cream cheese, sprinkle with chives and cut into 1/2-inch cubes. Lightly coat individual baking dish with a non-stick spray. Place bread cubes in the bottom of baking dish, topping with mushrooms and tomatoes. Put a few shreds of cheese over tomatoes and put in to preheated 350-degree oven to warm. About 10 minutes before serving, break eggs over ingredients in baking dish, sprinkle with chives and add a little more cheese and bake until eggs are set but not solid, about 10 or 15 minutes. Serve right from dish, hot from oven.
