Clafouti

Ingredients:

2 eggs

2/3 cup sugar

1/2 cup milk

4 Tablespoons butter

2 teaspoons vanilla

1/2 cup flour

1/4 teaspoon salt

1 cup pineapple or blueberries

4 apples, fresh and firm

1 cup Gorgonzola cheese

Combine eggs and sugar; beat until frothy (about 2 minutes). Add milk, butter, and vanilla and beat until smooth. Stir in flour and salt. Distribute apples and and berries or pineapple over deep-dish pie pan. Pour batter over fruit and sprinkle with cheese.

Place pan on baking sheet. Bake clafouti for 10 minutes in preheated oven set to 475 degrees. Reduce temperature to 350 degrees and bake until top has puffed and toothpick inserted comes out clean (about 30 minutes). Cool for about 20 minutes on a rack. Dust with powdered sugar.
