Warm Fruit Compote

Ingredients

1/2 cup sugar

1 Tablespoon grated orange peel

1 cup or more fresh orange juice

1 cup water

Two 3-inch cinnamon sticks

3 large Granny Smith apples, peeled and halved lengthwise and cored

1 cup pitted prunes

1/2 cup dried apricots

1 teaspoon unsalted butter

1/2 cup toasted walnuts

Process sugar and orange peel until peel is as fine as sugar. Transfer sugar mixture to heavy non-aluminum saucepan. Add 1 cup orange juice, water, and cinnamon sticks. Cook over low heat, stirring, until sugar dissolves. Increase heat to medium high and cook 5 minutes.

Using a thick slicing blade, stand apples in feed tube of food processor and slice, using firm pressure. Add apples, prunes, and apricots to hot syrup. Cook over medium heat until apples are crisp tender, stirring occasionally, about 12 minutes.
